
Each year’s new harvest gives us an opportunity to build on lessons learnt in land and tree care, and see these through into the quality bottled extra virgin olive oil we produce.
We harvest in Autumn. Using a device called an oli-net that wraps around the tree trunk and opens to form an umbrella like catcher from which our team collect the fruit. Fruit is taken off the tree using a device called an oliviera, essentially large spinning tongs. This technique minimizes bruising and yields a superior quality.
While olive trees are hardy, to produce a high quality oil you need to water and prune them regularly to maintain their shape and health. Cared for in this way, a tree can last up to several centuries and remain productive for as long.
Our skilled and experienced team maintain a regime of routine pruning, fertilising and careful harvesting, monitored with regular visual inspection and soil testing. This ensures the consistently high quality fruit and olive oil that we promise in each bottle.
